Protein Chicken Bake
Huge shout out to my son’s fiancé for this one! I’m terrible at making myself lunches and usually end up starving until supper. But with this little dish, it’s easy, curbs hunger and gives a nice midday boost of protein. Makes approx 3 servings and reheats wonderfully.
12 oz of canned chicken
12 oz Cottage Cheese
3 TBS Frank’s Hot Sauce, more or less as preference
1/2 tsp garlic powder
1/4 shredded cheese
garlic salt sprinkle & chili powder for top
In a bowl, break apart chicken chunks, add cottage cheese, hot sauce and garlic powder.
Place mixture into small baking dish.
Top with shredded cheese. *I prefer mexican shredded cheese
Sprinkle with garlic salt and chili pepper to your liking.
Bake at 350 degrees for 30 minutes, until cooked through.
