Korean Tacos
….well they’re sorta Korean Tacos. LOL My guys don’t love the kimchi in the original recipe so we leave it off but the sweet heat of the ground beef combined with the Sriracha sauce is still delightful.
I like to serve this with our Mexican Street Corn recipe. I know, I know…. weird but it’s still delish. Let’s just call it an international supper! Ha!
For the Beef:
1 lb ground beef
1/4 cup brown sugar
1/4 cup reduced sodium soy sauce
2 tsp sesame oil
1/2 tsp red pepper flakes
1/4 tsp ground ginger
2 tsp avocado oil
2 cloves minced garlic
For the Sauce:
1/4 cup mayonnaise
1 Tbsp sriracha
2 tsp lime juice
Tortillas, small
Fresh Cilantro, if desired
Cotija Cheese, crumbled
In a small bowl, whisk together brown sugar, soy sauce, sesame oil, red pepper flake and ginger.
Heat oil in pan sautéing garlic until fragrant. Add ground beef and cook thoroughly.
Add sauce mixture to ground beef and simmer until slightly thickened.
For the sauce, whisk together mayo, sriracha and lime juice.
Serve beef mixture on warmed tortillas, topped with the sriracha mayo, cotija cheese and cilantro. Enjoy!
